Dinner is fixed price, and your only option is the chef’s ever-changing 12-course menu. You will be asked about allergies and spice tolerance, so the dinner can be customized, but there is no actual ordering, other than beverages. Among the cascade of dishes presented to you, you might find banana leaf-wrapped red snapper in yellow curry, pastry baskets filled with shrimp and shiitake mushrooms, spicy chili lobster, pork satay salad, or veal medallions with ginger and lemon grass. Desserts (you’ll get two) might include sticky rice with papaya or coconut sorbet with fresh fruit and red bean sauce.
