Pierre Gagnaire is modernly elegeant, with truly innovative flavors and ingredients.  Special attention is given to texture, temperature, esthetics, and balance. This is probably the most adventerous of all of the Michelin three stars in Paris.  Ultra fresh and exotic ingredients include prawns flown in from Madagascar.  Service is great, as you would expect for the money.  The wine list is competent and the wine service very good.  Lunch is about 80 euros for the prix fixe menu without wine.  Dinner could easily run over 200 euros per person.

"Pierre Gagnaire balances flavors, temperatures, and textures better than any other chef I have tasted. His food is exhilerating. The service gets an A, for being attentive, knowledgable, and pleasant without being too friendly. The wine is superb if not extremely deep."
