Certain expectations are inevitable for a steakhouse nestled inside a five-diamond hotel; no one had better emerge from Charlie Palmer Steak at the Four Seasons wishing they’d gone to the Outback. That’s not likely to happen, given the subtle twists to traditional beefy fare and seafood entrees created by chef Joe Romano. An innovative array of side dishes, including several Charlie Palmer-exclusive potato creations such as the truffle baked potato, provide perfect accompaniment to the dry-aged Angus steaks. A spacious dining room offers enough privacy between tables for seven-figure business deals being closed over porterhouses. If more negotiation is necessary, sink into the overstuffed chairs in the adjacent lounge, reminiscent of the old British clubs that used to have “Men only” on the door, and hammer out the final details over brandy and cigars.

Charlie Palmer Well Worth the price

"This is my absolute favorite steakhouse in Las Vegas. Located with the Four Seasons Hotel, which is located within Mandalay Bay, crossing over into the Four Seasons side, it is like stepping into a hushed oasis. Unlike many other establishments in Vegas, this is all about understated class. With rich, dark woods, it’s like being let into a gentlemen’s club without the sidelong looks. Whenever I go to Vegas, I bring clients to Charlie Palmers, since it makes the ultimate impression. The wait staff is attentive and the entrées have always come out perfectly. The foie gras is perfectly prepared. The scallops are cooked to perfect consistency, not raw and not an overcooked rubbery mess. The Mediterranean Salad is also very good, crisp, with olives and just a touch of feta cheese. You can’t go wrong with any of the steaks. The filet mignon melts in your mouth, and the rib-eye bursts with flavor. The surf and turf is a perfect-sized filet, and the lobster quite good. If you just must have seafood, all of the fish dishes are well prepared. Go with the halibut. All of the sides are á la carte. The best sides, in my opinion, are the sautéed mushrooms, sautéed spinach, asparagus, potato gratin, or the potato puree. The baked potato is excellent, but at $13, a bit pricey. All of the portions, including the potato, are enough for two to three people to share. For an additional $5, you can also choose from four different sauces to accompany your steak. My personal favorite is the cabernet reduction. If after all of that you still have room, try the Milk Chocolate Hazelnut Bombe. The restaurant has an extensive wine list as well and will prepare most specialty drinks. The wine steward is knowledge and will help you with your wine selection if necessary. The staff is more than willing to ensure you have an exquisite dining experience. All of this comes at a high price. Dinner here will run, on average, $70 per person. But it is well worth the price, as you will be hard-pressed to find such great service or excellent food."
